Slow Cooker Chicken Tacos

  • 1 lb chicken breasts
  • 1 24 oz jar salsa or homemade see links in recipe notes

For Serving

  • 8 large lettuce leaves
  • Greek yogurt
  • hot sauce optional
  • fresh cilantro optional
  • lime wedges optional


  • In a slow cooker, add chicken breasts and salsa. Cook on high for 4 hours (low for 8).
  • Remove chicken and shred with a fork. Add back to slow cooker and stir to incorporate cooking juices.
  • Spoon chicken onto lettuce leaves and top with yogurt, hot sauce and cilantro. Serve with lime wedges.


1 serving = 4 oz protein, 1 cup vegetable
