- 4 oz goat cheese, softened
- 4 eggs use egg whites for a less "eggy" flavor
- 4 Tbsp arrowroot powder
- 2 tsp baking powder
- olive or coconut oil cooking spray
- Blend together all ingredients except cooking spray.
- Spritz a pan or griddle with cooking spray.
- Pour 1/4 cup of batter and cook approximately 2 minutes on each side.
