Roasted Italian Squash
- 2 cups zucchini diced
- 2 cups yellow summer squash diced
- 1 clove garlic minced
- 1 tsp Italian seasoning
- 1/2 tsp Celtic sea salt
- 1/4 tsp black pepper
- olive oil cooking spray
- Spritz a large baking dish with cooking spray.
- Add all ingredients to baking dish and stir to coat with seasonings.
- Spritz the top with cooking spray and bake uncovered 25 minutes or until squash is fork tender.
