Mediterranean Asparagus

  • 2 cups asparagus chopped
  • 1 Tbsp red onion minced
  • 3 Tbsp lemon juice
  • 2 Tbsp caper juice
  • 1 Tbsp fresh mint or parsley chopped
  • salt and pepper to taste


  • Lightly steam the asparagus until tender and set aside.
  • In a small bowl, mix together remaining ingredients and add asparagus.
  • Let marinate 30 minutes before serving.


Phase II Variation:
Drizzle with olive oil or melted butter.
1 serving = 2 cups vegetable
