- 2 cups asparagus chopped
- 1 Tbsp red onion minced
- 3 Tbsp lemon juice
- 2 Tbsp caper juice
- 1 Tbsp fresh mint or parsley chopped
- salt and pepper to taste
- Lightly steam the asparagus until tender and set aside.
- In a small bowl, mix together remaining ingredients and add asparagus.
- Let marinate 30 minutes before serving.
Drizzle with olive oil or melted butter. 1 serving = 2 cups vegetable
