Mashed Daikon Radish
- 2 cups daikon radish, peeled and chopped
- 1/2 cup cottage cheese
- 1/2 tsp Celtic Sea Salt
- 1/4 tsp black pepper
- Boil daikon pieces in water until fork tender.
- Pour into a large strainer and use a spoon to press as much water out of the daikon as possible.
- Combine strained daikon, cottage cheese, salt and pepper in a blender or food processor and blend until smooth. (An immersion blender also works well).
