Mashed Daikon Radish

  • 2 cups daikon radish, peeled and chopped
  • 1/2 cup cottage cheese
  • 1/2 tsp Celtic Sea Salt
  • 1/4 tsp black pepper


  • Boil daikon pieces in water until fork tender.
  • Pour into a large strainer and use a spoon to press as much water out of the daikon as possible.
  • Combine strained daikon, cottage cheese, salt and pepper in a blender or food processor and blend until smooth. (An immersion blender also works well).


1 serving = 2 cups vegetable
