- 4 oz lobster tail chopped
- 1/2 cup celery diced
- 1/2 cup cherry tomatoes halved
- 1 Tbsp lemon juice
- 1 tsp apple cider vinegar
- pinch tarragon
- salt and black pepper to taste
- 1 cup mixed greens
- green onion sliced for garnish
- Mix together lobster,celery, cherry tomatoes, lemon juice, apple cider vinegar, tarragon, salt and pepper.
- Spoon over mixed greens and top with green onion.
