Indian Spiced Spinach

  • 2 Tbsp onion minced
  • 1/4 cup chicken broth or water
  • 1/8 tsp cumin
  • 1/8 tsp paprika
  • 1/8 tsp turmeric
  • pinch fresh grated ginger
  • pinch ground coriander
  • salt and pepper to taste
  • 4 cups spinach


  • Saute onion in broth and spices until translucent.
  • Add spinach and stir gently until cooked.


Phase II Variations:
  • Add melted butter or ghee.
  • Stir in chunks of paneer cheese to make palak paneer, a traditional Indian dish.
