Grilled Steak and Tomatoes

  • 2 small tomatoes halved and cored
  • olive oil cooking spray
  • salt and pepper to taste


  • 4 oz filet
  • 1 tsp rosemary
  • 1 tsp basil
  • 1 tsp parsley
  • salt and pepper to taste


  • 1/4 cup beef broth no added sugar or oil
  • 2 tsp balsamic vinegar
  • 1 tsp minced shallot
  • 1 clove garlic sliced
  • 4 cups baby spinach
  • salt and pepper to taste


  • Preheat grill.
  • Lightly spray the tomato halves with cooking spray, season with salt and pepper. Grill for 8 minutes per side.
  • Rub the filet with spices, salt and pepper. Grill 4-7 minutes per side, until you reach desired doneness.
  • In a large skillet, add beef broth, balsamic vinegar, shallot, garlic and spinach. Season with salt and pepper and cook until spinach is wilted.
  • Put the spinach mixture on plate and top with grilled steak and tomato.
