Ingredients

  • 2 eggs
  • 2 Tbsp cottage cheese
  • 2 Tbsp Greek yogurt
  • 1 tsp pure vanilla extract
  • 1 tsp lemon juice
  • 2 tsp flaxseed, ground
  • 1 Tbsp Xylitol
  • 10 drops SweetLeaf Stevia Hazelnut
  • 1/4 tsp ground nutmeg
  • coconut oil cooking spray

Instructions

  • Preheat oven to 350°F.
  • In a blender, combine eggs, cottage cheese, yogurt, vanilla, lemon juice, flaxseed xylitol, and stevia.
  • Blend until smooth.
  • Spritz an oven-safe dish with cooking spray, pour in egg mixture and sprinkle with nutmeg.
  • Bake 30 minutes or until toothpick comes out clean.
  • Serve warm or chilled.
