Cucumber and Tomato Salad

Ingredients

Salad

  • 2 cups cucumber, peeled and diced
  • 2 cups tomatoes, cut into wedges or cherry tomatoes, halved
  • 1 Tbsp fresh dill, chopped
  • 1 Tbsp fresh mint, chopped
  • 1 Tbsp fresh parsley, chopped

Dressing

  • 1/2 cup Greek yogurt
  • 4 Tbsp lemon juice
  • 1/2 Tbsp fresh dill, minced
  • 1/2 Tbsp fresh mint, minced
  • 1/2 Tbsp fresh parsley, chopped
  • 1/2 tsp Celtic Sea Salt
  • 1/4 tsp black pepper

Instructions

  • Toss together all salad ingredients.
  • Mix together all dressing ingredients and pour over salad.
  • Toss to coat and let sit 10-30 minutes before serving for best flavor.

1 serving = 2 cups vegetable
