Crustless Pumpkin Pie (Phase II)
- coconut oil cooking spray
- 1 15 oz can pumpkin puree no added sugar
- 2 eggs
- 1/2 tsp SweetLeaf Stevia Clear
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmet
- Preheat oven to 350°F.
- Spritz an aluminum or glass pie dish with cooking spray (or 6 muffin tins).
- Whisk together pumpkin, eggs, stevia and spices and pour into baking dish.
- Bake 45 minutes or until firm.
