Chicken and Blackberry Salad
- 4 oz chicken breast
- 1 tsp balsamic vinegar
- 1 tsp lemon juice
- 1/4 tsp lemon zest
- 1/4 tsp Celtic sea salt
- 1/4 tsp black pepper
- 1/2 cup blackberries
- 2 cups mixed greens
- Poach chicken in boiling water.
- Remove from heat, drain, and slice into small pieces.
- Mix together vinegar, lemon juice, lemon zest, salt and pepper.
- Top mixed greens with cooked chicken, blackberries and vinegar mixture.
1 serving = 4 oz protein, 2 cups vegetable, 1 serving fruit
