Broccoli Cheese Soup

  • 3 cups broccoli florets
  • 1 cup onion, chopped
  • 2 cloves garlic
  • 1 cup vegetable broth, divided
  • 1 cup cottage cheese
  • 1 Tbsp nutritional yeast
  • 1 tsp Celtic sea salt
  • 1/2 tsp black pepper


  • In a large saucepan, add broccoli, onion, garlic and 1/2 cup broth. Cover, bring to a boil and cook until broccoli is tender.
  • Put broccoli mixture in a blender or food processor with cottage cheese, nutritional yeast, salt and pepper.
  • Blend until smooth, adding remaining broth, if necessary to reach desired consistency.
