Broccoli Cheese Soup
- 3 cups broccoli florets
- 1 cup onion, chopped
- 2 cloves garlic
- 1 cup vegetable broth, divided
- 1 cup cottage cheese
- 1 Tbsp nutritional yeast
- 1 tsp Celtic sea salt
- 1/2 tsp black pepper
- In a large saucepan, add broccoli, onion, garlic and 1/2 cup broth. Cover, bring to a boil and cook until broccoli is tender.
- Put broccoli mixture in a blender or food processor with cottage cheese, nutritional yeast, salt and pepper.
- Blend until smooth, adding remaining broth, if necessary to reach desired consistency.
