Breakfast Tofu Scramble
- 8 oz firm tofu
- 1/4 cup onion diced
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 4 cups baby spinach
- 2 Tbsp nutritional yeast
- 1 tsp Celtic sea salt
- 1/2 tsp black pepper
- olive or coconut oil cooking spray
- Spritz a skillet with cooking spray and add tofu, onion and bell peppers.
- When onions are translucent, add spinach and cook until wilted.
- Add nutritional yeast, salt and pepper and stir to combine.
1 serving = 4 oz protein, 1 cup vegetable
