Arugula Salad with Chicken and Fruit

  • 4 oz chicken breast
  • 2 cups arugula
  • 1 apple diced
  • 1 Tbsp red onion diced
  • 2 Tbsp salad dressing See links in recipe notes
  • salt and pepper to taste


  • Lightly salt and pepper chicken and cook in a skillet on medium high heat until slightly browned.
  • Remove chicken from heat and set aside.
  • Wash and dry arugula.
  • Lay chicken, apple and onion over arugula and spoon over dressing.
